Baked Sausage and Veggies!


This is an incredibly easy meal that is fast and perfect for after work. I usually use Italian Sausages though I've used polish as well with different veggies. The main thing is to have enough oil or liquid to make sure the veggies roast well.


3-4 sausages
Veggies of choice roughly chopped (tomatoes, eggplant, zucchini pictured)
Herbs of choice to your taste (fresh oregano and rosemary pictured)
Salt and Pepper
2 Tblsp. Olive Oil

Toss chopped veggies with herbs, salt, pepper and oil in a bowl ,  place on top of sausages in a baking dish.  Bake in a 400 degree oven for 30-35 minutes, until veggies are tender and sausages are cooked through. Can be eaten as is or with pasta or rice.
